The easy way would be a restore. I would guess it's important that you haven't made another backup since you deleted the app.
iTunes: Connect your iPad and right click it in the left pane in iTunes. Choose "Restore from Backup"
iCloud: Go into the Settings app and go to General -> Reset -> Erase All Content and Settings. When it's done, you can choose to restore from an iCloud backup when you go through the initial setup steps.
....and just to save my own skin: if anything goes wrong, please don't blame me ;)
If you don't want to restore, you can find the backups on your computer here:
Mac: ~/Library/Application Support/MobileSync/Backup/
Windows XP: C:\Documents and Settings\(username)\Application Data\Apple Computer\MobileSync\Backup\
Windows Vista / 7: C:\Users\(username)\AppData\Roaming\Apple Computer\MobileSync\Backup\
BUT, depending on your settings, the files are either anonymized by name or encrypted. The default setting is no encryption, so if you just need the photos, you can dig through the files and rename them to JPG or the raw (look for file sizes that match your JPEGs / RAWs). Tiresome, but it's an option.
